Chicken Kiev

This was tonight's dinner. It turned out okay. It was hard getting the chicken flat enough to roll up, but it tasted good.


1/4 cup butter, softened
1 tbsp minced chives
1 garlic clove, minced
6 boneless skinless chicken breast halves
3/4 cup crushed cornflakes
2 tbsp minced parsley
1/2 tsp paprika
1/3 cup buttermilk

In a small bowl, combine butter, chives, and garlic. Shape into a rectangle. cover and freeze until firm (30 min). Flatten each chicken breast to 1/4 in thickness. Cut the butter mixture into 6 pieces. Place 1 piece in the center of each chicken breast. Fold long sides over butter, fold ends up and secure with a toothpick.
In a shallow dish, combine cornflakes, parsley and paprika. Place buttermilk in another shallow dish. Dip chicken into buttermilk and then coat with cornflake mixture.
Place chicken seam side down in a greased baking dish. Bake uncovered at 425 for 40 minutes.
